Ingredients
Orichetti, 1 lbRed Peppers, 2 cut in half lengthwise
Pesto
Parmesan cheese
Directions
- Place peppers in boiling water for not more than 4 minutes to cook. Then dip in ice water briefly to stop the cooking.
- Cook pasta and toss with pesto
- Fill the peppers with the mixture and top with parmesan cheese.
Notes
- Serve as a side dish or with a salad for a light meal
