Crab Dip


Recipe Summary

Ingredients
Crab meat, 1 lb., canned or fresh
Cream cheese, 3-8 oz.
Mayonnaise, 1/2 cup, low fat
Tobasco, 3 drops
Onion, 1 small, chopped fine
Garlic, to taste
Salt, to taste

Directions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients.
  3. Bake 20 minutes or until dip is heated through.
  4. Serve warm.
Notes
  1. 2 lb. crab meat may also be done with extra cream cheese.

Mexican Layer Dip


Recipe Summary

Ingredients
Refried beans, low fat, 1 can
Avocado, 3 mashed
Lemon juice, 2 Tbs
Sour cream, 8 oz.
Taco seasoning mix, 1 small pkg
Mayonnaise, low fat, 1 cup
Tomatoes, vine ripe, 3 chopped and seeded
Green chilis, 1 small can, diced
Green onions, 3 chopped fine
Black olives, 2 small cans, sliced
Cheddar cheese, 1 cup shredded
Monterey jack cheese, 1 cup shredded
Tortilla chips

Directions
  1. Spread refried beans on bottom of glass pan.
  2. Mix avocados and lemon juice. Spread on top of beans.
  3. Mix together sour cream, taco seasoning, and mayo and spread as 3rd layer.
  4. Mix together tomatoes, chilies, green onions, and black olives and spread as 4th layer.
  5. Sprinkle with cheeses to form top layer.
  6. Chill until ready to serve. Serve with tortilla chips.
Notes
  1. I dislike olives and typically place them only on one half of the dip. If you dislike something either omit or do likewise.
  2. I guesstimated the amounts of veggies and cheese. Do whatever looks right.

Cream Cheese Filled Dates


Recipe Summary

Ingredients
Dates, pitted and halved
Cream cheese, low fat
Mint leaves, fresh
Asian pears, sliced

Directions
  1. Layer in the following order: date, cream cheese, mint leaf, pear.
  2. Place in refrigerator for at least 10 minutes
  3. Serve chilled
Notes
  1. If large dates are not accessible remove pit and leave date whole.
  2. To avoid food-borne illness keep this starter on ice to keep cream cheese cold.
