Fresh Lime Curd

Put this curd over a scone and clotted cream for a great tea time treat. I tasted this for the second time at my tea party last weekend and finally asked for the recipe. Stirring for 20 to 25 far exceeds what I would describe as an easy recipe. But since no jar of curd I have found to date matches the tartness I will be making this in the future. When I do I will post some notes. Until then the directions alone will have to do.

Ingredients
Sugar, granulated, 1 cup
Butter, 1/4 cup
Lime juice, fresh, 3/4 cup
Lime zest, 1 Tbs
Eggs, 2 large, beaten

Directions
  1. Place the sugar, butter, lime juice, lime zest in the top of a double boiler; stir over medium-high heat until butter is melted.
  2. Mix 2 Tbs hot lime mixture into the eggs and stir to blend.
  3. Reduce heat to medium until water simmers. Slowly whisk egg mixture into the lime mixture. Cook over the double boiler until lime mixture thickens and coats the back of a wooden spoon, 20 to 25 minutes.
  4. Cool slightly and spoon into a clean, glass jar. Cover and refrigerate.
